Beef Crostini with Horseradish Cheese Spread & Caramelized Onion Appetizer

INGREDIENTS

  • 1 baguette, 1/2" sliced on an angle

  • Extra Virgin Olive Oil, for brushing and cooking onions

  • ½ lb. Roast Beef, thinly sliced

  • 1 Large Red Onion, thinly sliced

  • 8-12 oz. Pine River Horseradish Cheese Spread

  • Baby Arugula Greens


DIRECTIONS

1. Preheat oven to 400 degrees and line two baking sheets with parchment paper.


2. Arrange baguette slices in a single layer on the backing sheets and brush both sides with olive oil.


3. Bake for 10-12 minutes, or until golden and toasted.


4. In a skillet heat 1 tablespoon of olive oil, add sliced onions, and cook until browned and caramelized.


5. Place 8 oz. of cheese spread in a microwave safe bowl and heat in 30 second intervals until warmed and melty, repeat with more cheese, if needed.


6. Top baguette toasts with slices of beef, spoon warmed cheese on beef, top cheese with caramelized onions, and garnish with arugula.
